Looking to make some beef jerky this weekend.  Planning on marinating for 24 hours, and then cooking for 4-6 hours at 160-180 (See: http://microwebtech.com/ )

Anyone ever make their own jerky?  Any recipees or insight?  I know we have a few forum chefs.
The desire for polyester is just to powerful.

Yeah, made a ton of it back in school. Slowly cooking it and dehydrating it is the best way to go.
