BBQ Pork. Throw a pork shoulder in with a little water, rub, and even some BBQ sauce if you want. Set it on low, and let it go for 8 hours or so. Pulls right apart. Works for ribs too.

This reminds me that 1) I got an Instant Pot and it rules, and 2) My Instant Pot has started messing up.

If you do ribs, add a bottle of liquid smoke for some extra flavor.
