gelatin/plastic stuff I believe. Their thickness determines how hard/brittle they are. None will be soft unles they are warped/exposed to inclement/unfavorable weather.

They are made out of gelitin.  They become soft when they collect mositure and hard when it gets cold.

Thickness plays almost no role.   A thin shell will be as brittle as a thick shell, only the amount of moisture matters.

no plastic in paint. everything paint is made out of has to be biodegradable.

Actually there are paintballs made with plastic shells, I forgot the link, found it years ago when I was first getting into the sport.

EDIT :  Not what I was looking for, but they are mentioned here :  http://www.warpig.com/paintball/articles/news/052402sp.shtml - Link
