I cant get Mello Yello anywhere arround here. It's just MT Dew. The King approves of your refreshing drink thou He frowns uppon uncooked fish & eels. Only japanease cuisine I really Dig are the Sobas and the Okinawan Beef & Chicken Yaki Soba.

The part of Canada that I am in is quite full of Asian people. We have a very large population of Vietnamese. Coincidently we also have a heroin and cocaine problem in my town...

Thats a reason NOT to eat the sushi there. Who would want to eat fish from the great lakes? Not me. The only fresh water animal in sushi should be  fresh water eel.

Yeah, it's a common mistake to eat sushi with chopstick. You are supposed to use your hands.

Anyways, I eat sushi a ton, I'm on a first name basis with the owner, and the waitresses down out the local sushi place. It's great great stuff.

OMGAWD

Actually no, I did not use the chopsticks. That is why they are in the same place in every picture. I only use them to poke extra wasabi down into the roll.

And yes I know, putting extra wasabi in is OMGAW NOT PROPER GET U KICKED OUT IN JAPAN. This is not Japan, and people here are weak with the wasabi.

we get pretty decent sushi here, if you go to the right place.

there's a place in toronto that the sushi makers, put on little boats that float on a water track towards you.

Anywho, while it isn't necessarily proper to poke extra wasabi in the roll, I don't think it matters since you weren't eating anything that would be served outside of a tourist-style restaurant in Japan anyway. I was being rather off-hand in my post, but as we all know, humor doesn't come across well on teh intranwebs.

If you were in Nippon however, the extra wasabi would go into the shoyu. Also, nigiri should be turned upside down to avoid getting the rice soaked with shoyu. The art of sushi is more than a little bastardized here in the west. We like to pour on the heat or soak up the soy rather than appreciate the natural flavors present in the maki or nigiri. The true sushi experience is all about umami, or 'savoriness' in English, and how the different flavors play off of each other to create the overall effect.

BTW, if anyone wants a darn good and very simple eel sauce recipe, pm me!

Sushi-snobs annoy me.

The ones, while I am at the sushi bar, that feel the need to point out every inaccuracy about western Sushi, how I am eating it wrong, how it should be, how it is fake, how if I was in Shikimagikikiki Japan a Samuri would katana me to death if I tried to do this or that.

Dear god, let me eat my sushi in peace.

As for veggie rolls, if you haven't tried Kanpyo, dear lord! it's a sweet marinated gourde. Almost like dessert sushi. Also, I'm an Inari WHORE!!!!

I'd never purposefully point out sushi inaccuracies to ANYONE at a restaurant TKD, as I said, just being a bit silly with the whole thing. I hate those people as well. They were the same ones that would ask what a "gaijin" was doing behind the sushi bar when I worked for Master Yuichi Fujita. I figure, if the president and CEO of Toyota don't mind me behind the sushi bar, then some white boy from the suburbs who studied Japanese in college and visited Okinawa or Tokyo ONCE should be fine with it too... but apparently not. Go figure.

While we're on the subject of Japanese food (one of my fav cuisines!) Tenzaru Soba.... LOOOOOOOVEEEEEE IT!

Mind you, this picture is missing the raw quail egg.

we've also decided to do tempura tomorrow night, which is definately up there on my japanese cuisine list.

Fresh sushi grade fish is VERY mild tasting with next to no 'fishyness'

yeah it's really different than cooked fish

If it is good, it will have little to no smell.

If you go into it, thinking eating raw fish is disgusting and having a bad attitude towards it, you won't enjoy it.

 

I suggest you start with rolls then move into some sashimi.... salmon is a good starter fish, so is tuna. neither are very expensive.

Try a California roll for your first sushi roll. There is no raw fish in them, its usually crab or crab flavored pollock.

well... depends on where you buy it

i have had many calafornia rolls with fish in it, but really no matter what you put inside it you mainly taste 3 things: The rice, The seaweed, and the wasabi

Why? For spring break we go to Key West and go deep sea fishing, and there aren't many things better than fresh Tuna, Snapper, King Mackeral, etc. etc. Absolutely amazing.

I have had sushi once in DC. It was a rainbow roll or something. A little bit of everything if you will. I liked it well enough and would like to try some more. Good thing about sushi is that it is so damn healthy. I wish we had good sushi places around here. This thread makes me jealous.

I like it. It has a reputation of being chewy, but can be quite tender if cooked right. Overall I think it has a good taste, more body than beef.

Caribbean food rocks, I put it up there with Sub-Continental (Indian, Afghan, etc). The flavors in Caribbean are more closely related to the flavors of the Indian sub-continent due to the spice trade that stopped over in the Caribbean on their way to Europe to offload their goods. Caribbean curries tend to be a bit milder than say, a Madras or Garam Masala. They also vary in color greatly as they no longer rely on the ingredients brought over from India but rather the local ingredients that accomplish the same purpose but with varied flavors. Curried goat has to be one of my favorite dishes. The trick to goat (and other "working" animals) is to braise them or stew them so that the collagen in the flesh is broken down by heat and moisture. The resulting gelatin both thickens the sauce/broth that is produced and works to lubricate the muscle fibers.

As for Jerk seasoning, there are as many seasonings as there are people who make it. The best that I've ever had were Jamaican and Haitian imports that incorporated habanero chilies. "Wet" jerk is superior to "dry" jerk as well. It isn't any wonder that TKD enjoys caribbean so much. The spiciness of the food would be right up his alley.

When I cook goat I usually do a quick short braise in buttermilk first to get cut down on the toughness and get out some of the "game" taste.
I am not a fan of curried goat as much as I am jerk goat. I take my goat, post buttermilk braise, rub on a jerk paste (or wet as you called it) and put either grill it over charcoal or put it under the broiler.

Serve with some mango and lime chutney.

When I lived in the Keys, I used to eat at a place called Cocoa Palms, Jamaica Me Hungry. It's on the corner of Front and Duval in Key West. Gooooood stuff! The Kingston Strip is THE BEST STEAK I've ever had. It was a slightly sweet but spicy jerk on a really nice NY strip. When I lived in B-More I had a bunch of Jamaicans who worked in my kitchen, that's where I learned about making jerk and some good chutneys. TKD, if you like chutneys, definitely try out a guava chutney, or just take some guava jelly, add a bit of key-lime juice and use it as a glaze on chicken. Good stuff!

Jerk steak is good. Like you said, if you put jerk on beef (or goat for that matter) it should be a sweeter jerk with more "tangy-ness", not the super strong spicy versions one would use on chicken.

There is a pretty established population of Jamaicans, Dominicans, Barbadians, and Haitians in Orlando. I have my favorite places, none of which are fancy, and none have more than 4 table, but are some of the best food I have ever had.

And currently I have 2 jars of guava preserves in my fridge. My dad grows guavas, mangoes, persimmons, pineapple, and papayas, and recently started preserving them as a hobby.

my uncle makes a lot of caribbeann food, its awsome. he made chicken jerk wings and they were amazing. now im hungry lol. and back to sushi, ill definatly try it if it doesnt have that strong taste/smell a lot of other fish have. maybe i'll like it =]
