I just have friends who are vegan, and i don't know any vegan recipes... figured they would come in handy.

chili is easy... but def. not vegan.
one pot... start with the beef and onions and some seasonings.
add everything else and let it sit for like... an hour or two.
as for vegan... umm... salads?

EDIT: Vegan Chili
1 can mixed veggies
1 can kidney beans
1 can stewed tomatoes
1 package Taco Seasoning
Mix all the ingrediants together in a large soup pot (do not drain the
beans, veggies, or tomatoes). Simmer until heated through. Top with sourcream, salsa, and vegan cheese. Serve with corn chips.

I'm a vegetarian, so I can make a lot of vegan things.
Potato pancakes are easy as are zuchini fritters. I make some really good vegan chili, that I'll share with you.
- 1-28 oz can petite diced tomatoes
- 2-15.5 oz can Dark red kidney beans (drained + rinsed)
- 1-15.5 oz can Light red kidney beans (drained + rinsed)
- 1-15.5 oz can Black beans & amp; nbsp; (drained + rinsed)
- 1-15.5 oz can corn (drained)
- 1-15 oz can Tomato sauce
- 2 white onions (chopped)
- 2 bay leaves
- 1-12 oz. package veggie protein crumbles (vegan, I use Morningstar Farms brand)
- chili powder, cumin, paprika, cayenne pepper, onion powder, black pepper, garlic powder, Adobo seasoning (to taste. I really don't measure these out, I'll start out by adding each, then adjusting accordingly until I get a combination that I like)
- Combine ingredients into pot (except veggie crumbles)
- Bring to boil. Reduce heat. Simmer for 30 minutes.
- Stir in veggie protein crumbles
- simmer for additional 30 minutes
- remove bay leaves and serve
edit- Some other suggestions- A good part of Indian and Middle Eastern food is vegetarian/vegan. Examples = Curry, Falafels, Tabouleh, etc. Tofu/vegetable stir-fry is easy and fast. Check out some websites.

Easy, cheap and quick for non-carnivorous (yech) meals:
- Boil favorite pasta
- Steam mixed veggies of choice
- You can buy them in "steam in" bags now
- Don't over steam (hot, but not mushy)
- Warm up the white pasta sauce of your choice (I know Bertolli makes an alfredo sauce and I think Classico does as well)
Serve veggies over pasta topped with sauce and sprinkled with parmesan cheese. A bagged ceaser salad and garlic bread make nice sides with this.
I can guarantee easy to make and clean, since I don't normally associate with vegans, I can't guarantee it will meet all of their dietary desires. (I can however guarantee it won't meat their diets.*)

Uhm stuffed mushrooms or sautee'd (sp?).
heres how:
Take out stems from some white mushrooms any size I usually like to make a dozen at a time.
Take butter and throw enough into a pan to fill it 3 or 4 millimeters high. I like to add a bit of worcestershire sauce and some steak seasoning but straight butter will work nicely.
heat the pan to a medium low heat.
take the mushroom cups and put them in until you see them start to shrink
get out some cheese (vegan cheese for your friends) Italian bread crumbs and the stems from the mushrooms (chop up all the stems finely).
mix the crumbs cheese and stems and mix them together with about equal parts.
If the cups are done by now (will be a golden brown and smaller then when they started) take your stuffing and put them into the mushroom.
or
If you just want sauteed (sp?) don't stuff them
and thats mushrooms for you.

| well, the milk part isn't too bad, imo, because the cows literally milk themselves now (saw it on How it's Made). Not sure about the eggs though.
And i think it was talen who asked about my kitchen? About average size, but not very many utensils, seeing as my mom got those in the divorce.

Ingredients: Spam Fresh White Rice Nori (dried seaweed)
Instructions: 1. Cut the spam block into slices so the pieces are the same length and width as the can.
2. Fry the spam in a frying pan. Usually you only want to cook each side for a minute or two till it gets darker, but you don't want to burn it. Its safe to eat raw so if you like it more tender cook it for a shorter time. If you like it more like bacon, cook it longer. You can also mix in shoyu (soy sauce) and sugar.
3. Cut out the bottoms of the now empty spam can and the top. Place wax paper under the can and place your nori too. Put the spam on top so it fits perfectly in the can. Add the fresh white rice and smash down with wax paper firmly until the whole thing is around 1in - 1 1/2in high. Wrap the nori around and seal with water.
4. Enjoy
Not exactly vegan cuisine but who really knows whats in spam

German Apple Cake
2 cups sifted flour
2 cups sugar
2 eggs
1 cup oil
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon baking soda
4 cups thinly sliced apples (Jonathan apples are good for baking)
Mix all but the apples in a large bowl until the batter is moist, mixed, and thick. I like to mix the eggs with the flour, then mix in a cup of the sugar, then mix in the other stuff before mixing in the last cup of sugar.
Mix in the apples with a spoon, even if you used a mixer on the first part. Keeps them in better shape.
Spread into a greased and floured 13"x9"x2" pan and bake at 325* for 60 minutes.
Your house will smell incredible.
I sometimes add an extra teaspoon of cinnamon or just a bit more vanilla.
This cake rules. I've been making it for ten years and made it for our food day at work earlier this week. It's a big favorite. Two other people brought dessert and those didn't get opened until my cake was gone.

(idk if this is vegan friendly, it's just all i know how to make)
Ramen Noodles
1 Package of any brand Ramen Noodles
Bring about 3 cups of water to a boil. Place the noodle brick into the water. Heat for 3 minutes or until noodles become soft. Remove the pot from the heat source and pour contents into a bowl.
Depending on how flavorful or sodium packed you like, pour whatever amount of excess water you feel is necessary.
Open package of flavoring powder and add to the noodles. Stir.
(If eating Asian Brand Ramen*)
Open the seasoning oil package and add to noodles. Stir.
If you like noodles with a kick, add the chili powder package contents.
Stir.
Enjoy.
*Highly suggested.

Yuck canned sauce. Make your own alfredo from scratch, not some canned boot leg stuff, then get some good tortellini. Add alfredo to tortellini and put in some peas on top also. That's a good alfredo dish.
