I have an A5, remote CO2, Flatline. I've always found it kind of finicky. I'm
a 100% outdoors player, and I've always been a Tippmann fan, so despite
it giving me trouble some times, I still love the A5.
What I'm looking for is a good shop or tech somewhere in or around the
Toronto area (I live in Oakville, west of Toronto) who can service my A5
and bring it back to a reliable level.
Any and all advice would be appreciated.

Tippmanns are very low maintenance. It is very easy to tech them yourself. Have you lubed it since you bought it? I suggest you read the http://tippmann.com/forum/wwf77a/forum_posts.asp?TID=62300&PN=1 - sticky How is it being "finicky" can you explain? PB Nation seems to dumb down lubing in their http://www.pbnation.com/showthread.php?s=&postid=11121882#post11121882 - FAQ

If you mean finicky on paint, that is a product of the Flatline if what I have read so far is correct.

There are several locations in toronto. For repairs, you would probably want to take it to Badlands [ http://www.badlandspaintball.com/ - here ], they have three locations in T.O. The stores are pretty big and they will be able to do any servecing you require. Unfortunatly, I think their products can be overpriced.

By finicky, I mean "acting up" on an irregular basis. Yes, I lube it at the
start of each season, and during the season as required (I do not over-
lube). The most common problem I have is consistently low FPS. It's
inherently low, to the point that the gun will "bat down" (where the bolt
does not go far enough back to lock in the cocked position - sounds like
full auto when it happens). I've also had regular instances where I pull the
trigger and nothing happens. The bolt slides forward without an gas
expelled and stops in the uncoked position. Luckily, since the cyclone is
gas operated, this failure does not result in two balls in the chamber once
I get the gas running again.
I've sent the gun back to Tippmann in it's original form, meaning I took
off the flatline, remote line, and CAR stock. And perhaps that's my
problem: Maybe I need to ship it to Tippmann in the state that's causing
me grief, so they can accurately fix the problem.

Can you describe what you mean by "...once I get the gas running again"? How does it operate without the remote line? Are there any kinks?
What about with another tank? Finally, although it doesn't appear that you've indicated any signs of a possible leak, have you examined the O-Rings?

If you screw your remote "on" too tightly it will re-close the valve on your tank by blocking the airway. This will cause burps and the gun will act as if it's starving for air.
You could also try polishing the internals. This may get you better velocity. Also look into a spring kit for velocity problems. Some guns just don't like to shoot to spec.
If I were you, I wouldn't waste the money. Make sure you completely break down the gun at least once a month (even better, every time you play) and properly oil everything, including the hammer and the valve especially, and any o-rings. Then, attach air, put a couple drops in the ASA and dry fire 10-20 shots without a barrel so you don't end up oiling your barrel up next time you use it.
oh, PS www.canadianpaintball.com will service your guns. I agree, badlands is overpriced.
