I get my first review from the boss tomorrow since I took the exec chef position over a year ago. I'm asking for a raise, and not a small one. The previous exec was at about $12k higher than I am right now in pay. He had twice the staff and two salaried sous-chefs under him. I've whittled it down to essential staff working for peanuts while producing great product and don't even have a paid supervisor under me, let alone two salaried sous-chefs. On top of that, I've metro-wide acclaim for our young restaurant after the previous chef got us thrashed by the WaPo food critic. I've also dropped our food cost by a considerable amount. I'm asking to be where the previous chef was and will settle for 5k under what he made with the promise of a review every 6 months and better bonus rates.

Oh, and before anyone posts a tec-9, he's a MPD officer and carries a .45ACP on him at all times.

In between the $12K request and the $5K settlement, see if you can't have some money appropriated for your staff.

And ask for $1200 a year to pay for a quarterly trip to your restaurant for Gatyr. Your boss will understand.

Wow, someone has no achievements.


As for the money for the staff, I've already conducted their 6mo reviews and given out the appropriate raises.

Also, did you know that in my tax bracket, $5000 extra a year only translates to $230/mo take home? 5k seems like a lot until the gov't starts taking chunks out of it. Especially in the area where I live. $1300/mo gets you 800sqft.

tallen, by all means if you can get it, go for it. if the previous guy did just as good or a lesser job than you, theres no reason you shouldn't get a raise of some sort. ignore the fool

You are a chef.  Ask for a raise by spelling it out on a dish. And by dish I mean food item, not a plate.
