It's that time of year (my favorite time of year) when the leaves are falling, the temperature couldn't get much closer to my "perfect" zone, and apple cidar is everywhere (and The Misfits are back on tour).   I loooove apple cidar (apple juice is for 4 year olds and those preparing for a colonoscopy).  This year I've been trying to find/make a good (alcoholic) drink with apple cidar, but so far I've got nothing.  There's a lot of reciepes on the internet but none so far have tasted very good.  

Anyone care to share a mix I should try? 
 
 
On a side note, a local bar serves Pumpkin Spice beer that they brew, and it's amazing.  Tastes like a pumpkin pie!  It's captured the tast of October the same way that Great Lakes Brewery has captured the taste of Christmas in their Christmas Ale.

5G unfiltered pasteurized apple cider
1ea Pitchable White-Labs English Cider Yeast
5tsp pectalase to break down the pectin so you don't wind up with bad phenols

ferment for 2 weeks in a primary fermenter with airlock, allow 1 week for yeast to settle, rack into secondary container, mix in 10oz priming sugar, bottle, cap, store for 2 weeks, refrigerate, enjoy.

what tallen said, substitute champaign yeast for higher alcohol content, also white raisins seem to soak up some of the occasional nasty aftertaste. Honey works as a good primer for secondary fermentation. Be careful with that stuff, it sneaks up on you.

I like the white labs cider yeast because it leaves more apple flavor vs the much drier champagne yeast fermentation.
