A lot of people I know have questioned my eating a plant that is mostly inedible.

However I too agree it is delicious.  I prefer it as an appetizer, to be honest.

I usually had them stuffed with chopped garlic, onions, and some other stuff that I don't recall (its been a while) but tonight the wife made a dip out of mayo, garlic, and some other stuff, and it was excellent.

Are you saying people should eat the leaves?  I just don't think that sounds good.  Also that little bit of fuzz near the heart is not delicious. I have tried it.

Paint is inedible. Artichoke leaves are not.
