So, the Subaru dealership I took my car to for the 3,750 mile service interval (the one I bought it from) seems to have messed up the gasket on the drain plug, or not tightened down the oil filter enough. As such, the engine is now dry and the car has to be flatbedded down to Alexandria tomorrow to have the engine torn down and checked over with a fine tooth comb. I'd much rather they just give me a new car, but that's probably not going to happen, so I'm going to demand they put their top mechanic on it, check every moving part that would require lubrication, replace all the piston rings and crank bearings, and extend my full warranty to 100k including all wearable parts in the powertrain. Car guys, am I missing anything here that I should be asking for?

Honestly, I would say that you are overreacting unless you were running the engine with little to no oil. They probably crossthreaded the oil filter or didn't torque the drain plug and it slowly leaked. If it were my car and there was a massive pool of oil when I saw my car in the morning, I would just change the oil and filter and leave it at that.
On a side note, I hope you enjoy Adam Oates, and did you get your Ovechkin "language barrier" shirt yet? I am probably getting Kovalchuks

People on your FB page gave good advice. If it was a double gasket, I'm sure you would have noticed a huge mess though. Happened once on my mom's jeep and oil sprayed everywhere. I've heard a lot of stories of dealers forgetting to put oil back in.

It ran dry. As in, there's no effing oil left in the car.
Undercarriage is awash with oil. Leak was from the front end of the engine bay, so I'm thinking it's the filter. They either owe me a factory new engine and 100k mile warranty to back the whole thing up, or a new car.

i would write to subaru. that is 100% unsat.
if they tear down the engine it will never be the same. maybe ask for a factory replacement?

Yeah, calling Subaru of America is a great idea (might try to get 100% of what you want from the dealer first). SoA is really really good about handling these type of things - they're known to be quite helpful on cars out of warranty, nevermind in warranty. Make sure you talk to them if things don't go your way.

Agreed if you aren't satisfied with the dealer, talk to Subaru corporate. Corporate is usually good at getting on to dealers and getting everything straight with the consumer. It definitely sounds like a double gasket on the filter. Sometimes the old gasket gets stuck on the engine.

So, did you actually run the motor with no oil in it or not?

I was driving when the oil pressure indicator lamp came on, about a mile from home, so yes.

most oil pressure indicator lights come on when it is two quarts low. So if you pulled over and shut it down as soon as the light went on, there would be no damage to the engine. Especially since you didn't try to limp it home, and had it towed back to the dealer.
It is hard on the engine to run it low on oil like that, but only if you kept driving it and it started getting hot. A dummy light is made to kick on before major damage is done. You can tell if there was a ton of oil on the ground when they put it on the tow truck. That was in the block when you pulled over, so it doesn't sound like it ran "dry".
It stinks that it happened, and this is the major reason I do all my own maintenance on my cars, I just don't trust someone else to do it right, as it isn't THEIR car.

So, it turns out that the tech who performed the maintenance didn't tighten the drain plug well enough. FE is correct that the oil light came on when it was low. Had 2.8qts remaining when they got it all drained out, so we avoided any issues. Ran a compression test and all the cylinders are above the Subaru factory new engine minimum of 1.85. The service manager told me outright that my decision to not try and drive it to someplace to have it serviced saved the day and that they effed up. They're going to swear out a statement explaining what happened and admitting fault. They've agreed that any issues that arise with the drive-train will be covered (parts and labor both) to 100k. I also have mechanical coverage from Geico, so I should be good.

Phew, bet that was a stressful day...
Good thing you aren't a girl, most women I know wouldn't even notice the oil light... And would only stop when the grinding and smashing of pistons/rings occurred, then would be mad that it didn't keep going.

So very, very true! Reminds me of the photo a buddy of mine put up on FB a while back:

glad it worked out, I must have missed the thread where you bought a subby. Even when I change my own oil I still check the filter/drain plug a few clicks later, I can't drive in peace unless I do.

I know a woman who was driving her husband's new truck, which was quite a
bit bigger than her vehicle, and drug the side of it along a parking
lot pole. She said later that she heard a funny noise but kept going
because she didn't know what it was.
She got every panel on the right side except the very front one

I was going to chastise USAF for the manner in which he referenced other
forumers but then, because I did read the post closely, I realized he
was calling himself names. The more I thought about, the more uncertain
I became of what to do so, since my brain now hurts, I'm going to
settle for telling USAF to "be nice to himself*" and go have an adult
beverage or two.
*Which also sounds wrong when you think about it.

A girl I know was making a right turn in a big van and hit a pole with the middle of the door and every panel back because she didnt turn wide enough. I asked her if she stopped when she hit it and she said, and I quote: "Yes, but by then it was too late and there was no way off it but to keep going forward." The thought to put it in reverse never crossed her mind.

My sister had a VW bus, and the parking brake went out on it... So one day she parked it on a hill, and instead of turning it off, left it running, and got out...
She was surprised when it rolled down the hill and tboned someone else's car before hitting a house.
Cause if you leave it running, you don't need the brake... Or something.
This is the same sister, that was surprised when another vw she had blew an engine, because she never changed the oil...
Oh, and she did that TWICE...
