Only open one bag at a time. your pods will keep most of the humidity out. Once again only open a small amount at a time. only fill 1 or 2 pods for short games. left over paint seal in a zip lock bag and keep in the shade. I have dealt with the humidity and heat all summer and this has worked well.

Anarchy Paintballs work best in high humidity, they slide right through my smallest barrel insert.

Yeah, id say evils would be the best.  Dont get the Mid-Evils though, those are just plain bad.

Anything small bore would be good. Most high quality paint is in ome way protected from humidity though.
