I recently bought a tippman X7. And also purchased the folding stock. It came with SHIMS. I'm just wondering what to do with these SHIMS?

The shims are there to act as spacers should the folding stock prove to increase spring tension too much/not enough to get the marker to fire at a proper velocity.
