chili is easy... but def. not vegan. 

one pot... start with the beef and onions and some seasonings. 

add everything else and let it sit for like... an hour or two. 



as for vegan... umm... salads?

EDIT: Vegan Chili

1 can mixed veggies

1 can kidney beans

1 can stewed tomatoes

1 package Taco Seasoning



Mix all the ingrediants together in a large soup pot (do not drain the beans, veggies, or tomatoes). Simmer until heated through. Top with sourcream, salsa, and vegan cheese.  Serve with corn chips.

I'm a vegetarian, so I can make a lot of vegan things.

Potato pancakes are easy as are zuchini fritters. I make some really good vegan chili, that I'll share with you.

  • 1-28 oz can petite diced tomatoes
  • 2-15.5 oz can Dark red kidney beans (drained + rinsed)
  • 1-15.5 oz can Light red kidney beans (drained + rinsed)
  • 1-15.5 oz can Black beans         & amp; nbsp;     (drained + rinsed)
  • 1-15.5 oz can corn (drained)
  • 1-15 oz can Tomato sauce
  • 2 white onions (chopped)
  • 2 bay leaves
  • 1-12 oz. package veggie protein crumbles (vegan, I use Morningstar Farms brand)
  • chili powder, cumin, paprika, cayenne pepper, onion powder, black pepper, garlic powder, Adobo seasoning (to taste. I really don't measure these out, I'll start out by adding each, then adjusting accordingly until I get a combination that I like)
  1. Combine ingredients into pot (except veggie crumbles)
  2. Bring to boil. Reduce heat. Simmer for 30 minutes.
  3. Stir in veggie protein crumbles
  4. simmer for additional 30 minutes
  5. remove bay leaves and serve

edit- Some other suggestions- A good part of Indian and Middle Eastern food is vegetarian/vegan. Examples = Curry, Falafels, Tabouleh, etc. Tofu/vegetable stir-fry is easy and fast. Check out some websites.

Easy, cheap and quick for non-carnivorous (yech) meals:

  • Boil favorite pasta
  • Steam mixed veggies of choice
    • You can buy them in "steam in" bags now
    • Don't over steam (hot, but not mushy)
  • Warm up the white pasta sauce of your choice (I know Bertolli makes an alfredo sauce and I think Classico does as well)
Serve veggies over pasta topped with sauce and sprinkled with parmesan cheese.  A bagged ceaser salad and garlic bread make nice sides with this. 

I can guarantee easy to make and clean, since I don't normally associate with vegans, I can't guarantee it will meet all of their dietary desires.  (I can however guarantee it won't meat their diets.*)

Uhm stuffed mushrooms or  sautee'd (sp?).

heres how:

Take out stems from some white mushrooms any size I usually like to make a dozen at a time.

Take butter and throw enough into a pan to fill it 3 or 4 millimeters high. I like to add a bit of worcestershire  sauce and some steak seasoning but straight butter will work nicely.

heat the pan to a medium low heat.

take the mushroom cups and put them in until you see them start to shrink

get out some cheese (vegan cheese for your friends) Italian bread crumbs and the stems from the mushrooms (chop up all the stems finely).

mix the crumbs cheese and stems and mix them together with about equal parts.

If the cups are done by now (will be a golden brown and smaller then when they started) take your stuffing and put them into the mushroom.

or

If you just want sauteed (sp?) don't stuff them


and thats mushrooms for you.
